A classic Italian combination Cascina Beleverde's organic tomato and basil risotto has a nicely balanced flavour and uses only the best organic carnaroli rice. It tastes as good as any risotto you will have in a restaurant.
If you would like to make this meal more hearty, we recommend adding in any selection of cooked vegetables you have on hand or leftover. Our recommendations that have worked well are zucchini, sweet potato, kale, silverbeet, green beans, red capsicum and corn.
Stove Top Instructions:
Heat contents with 1 tablespoon butter or olive oil in a heavy saucepan over medium-high heat. Add 1/3 cup dry white wine and stir until all the wine boils off. Add 2 2/3 cups of boiling water. Do not cover. Cook for 15 minutes stirring occasionally. It's done when tender but firm to the bite. Remove from the heat and add grated parmesan cheese and butter. Mix well and stand for a few minute until creamy before serving.
